Grilled Cajun Shrimp

Gotta love my Taste of Home Subscription!  Found this one in my June/July issue.  I made a very similar recipe previously using a bottled marinade but this has better taste and even though my previous way was easier, this is worth the extra mixing and really overall, this is still a very easy recipe to prepare.  Don't worry, it not that spicy!

Hello lil' Shrimpies!  
INGREDIENTS:
2 Tbsp olive oil
1 Tbsp onion powder
1 Tbsp paprika
1 Tbsp lemon juice
1 garlic clove, minced (I bought mine at the store already minced, just used 1/4 tsp of pre-minced      garlic)
1/2 tsp dried thyme
1/4 tsp crushed red pepper flakes
1/4 tsp coarsley ground pepper
1/4 tsp cayenne pepper
1 lb uncooked jumbo shrimp, peeled and deveined (I bought mine in the frozen section already peeled/deveined)
1 medium lemon, cut into wedges

Combine first 9 ingredients.  Add jumbo shrimp and coat.  Refrigerate for at least 30 minutes.  Using a grilling skillet, grill over medium heat for 15-20 minutes.

I served this dish with baked potatoes and a blue moon beer :)

Summer Pizza

So I just can't get enough of this pizza lately, it is so good and great for summer.  I took a recipe I had blogged about before and added a few ingredients to spruce it up and now it is perfection! 


We gobbled half of it by the time I got around to taking a pic


Ingredients:

Pizza Crust (the pouch mixes where you just at water I found are the best)
Philadelphia Cooking Creme - Italian Cheese and Herb
Oscar Mayer Pre-Cooked Southwestern Deli Fresh Chicken Breast, take out of pkg and dice
1 medium tomato, cut into thin slices
1 medium green bell pepper, diced
1 package of Mozerrella Shredded Cheese
Italian Seasoning

Make pizza crust according to package.  Spread half of the tub of cooking creme on pizza crust.  Layer with tomatoes then chicken then green peppers, then top with A LOT of cheese.  Shake some italian seasoning on top and cook until desired crispiness at the same temp the pizza crust calls to be cooked at. 

I love my shortcut ingredient I added, the pre-cooked chicken, you will never know it is pre-cooked when it has been baked into the pizza.  So easy!

This pizza will knock your socks off!!

Skinny Cow Dreamy Clusters


Have you tried these yet???  They are AMAZINGLY delicious!  I love how they have dark chocolate but they do have milk chocolate ones too.  They are SOOOO good.  If you go to Walgreen's or HyVee you can buy a single pouch to try them or you can buy a whole box of them like I did.  :)
