A Dose of Inspiration

I've heard this father and son story numerous times and enjoy it each time.  It's very uplifting and inspirational.   This story never ceases to amaze me.

Chicken Fajitas

Usually I make different variations of chicken fajitas but I recently came up with the most simpliest way to make chicken fajitas without compromising taste.  Gotta love a good shortcut! Here is what I did....

Ingredients:
Package of chicken tenders
Archer Farms Taco Seasoning (as pictured below)
Archer Farms Grilled Pepper Blend (as pictured below)

In a skillet, add a little water and olive oil and cook chicken until no longer pink.  Drain.  Add a little water back into the pan and the chicken.  Add a half of the taco seasoning packet.  Mix in well with the chicken and let it simmer for a few minutes.  Then add half of the grilled pepper blend package.  Continue to simmer for a few more minutes and then serve with shredded cheese and diced tomatoes on corn tortillas. 

Archer Farms ingredients can only be found at Target.  That is the key factor to the taste of how my fajitas turned out.  I call this a shortcut because you don't have to clean the peppers, deseed them, and chop them up, it's all done for you.  Yes I am that lazy that I am lovin' this new frozen blend!!!  Already been thinking of how I can incorporate this frozen pepper blend into other recipes since we loved it!  Also the taco seasoning is much different than the regular packets you would normally find in your grocery store, you will find this seasoning to be of better quality.

What's On My Mind....

It’s Thursday, one day closer to the weekend. So happens to be a 3 day weekend for me since I have President’s Day off.

I’m super busy at work, plenty of projects, not just minor projects, but big time consuming complicated projects. And a coworker in my department decided to take today and tomorrow off. So that means I get to do her work load too :(

I can’t wait for the 3 day weekend to arrive….

Today it is unseasonably warmer than usual. When the temperatures outside changes dramatically, the large building I work in cannot keep up with the change. Therefore it is a balmy 80 degrees in the office today. Talk about trying to stay awake on a Thursday afternoon….

The plus side is I can leave at 4 today. It’s not month end. I also only have to work 2 days next week because I have planned vacation days for next Thursday and Friday. Downside is when I come back these projects are no further along than when I left. Some days I zip right along making good progress and other days... like today… it takes a lot to stay focused.

Did I mention I have a 3 day weekend I’m really looking forward to?!?! Jeez, I wish it would hurry up and get here!!

Relaxed... Awesome Date Weekend!

Aaron and I decided to have a date weekend to celebrate Vday, it was so relaxing!  Here is what we were up to...

Friday night we went out for dinner at Fleming's.  Yummers!

After dinner, we went home and watched the Social Network, not a bad flick.  Wonder how much of it is really true because I've heard it is not very factual. 

Saturday Morning we had breakfast at Smokey Row.  This was our first time here and we really liked it!  We sat and talked about our summer vacation to Colorado, I've been doing most of the planning but needed to bounce some ideas off of Aaron to get his input.  It was a productive meeting :)

After breakfast, we got pedis/manis.  Yes my husband likes to get an occassional mani/pedi, LOL!  Come on... what man wouldn't after trying it?!  They are great!  He is such a good sport. 


I didn't get any pictures of our next visit, but we went over to Pet Smart as they were having a pet adoption day.  It happened to be Noah's Ark from Fairfield that were hosting the event.  We didn't fall in love with any particular dog that day but was fun to pet some pups.  After Pet Smart, we had lunch at Nick's Bar and Grill. I ordered a chicken sandwich and Aaron got the cob salad.

After lunch, we went over to Wine Style's for a wine tasting accompanied with some chocolate truffles.  We took a couple of bottles of wine home with us but the chocolate was gone before we ever got home.

Then we were off for a massage!


After our massages, we laid on the couch for a few hours, I caught up on some Dr. Phil and Aaron caught up on some reading.   Somehow after all this eating we had done so far, we got hungry for dinner and decided to head over to Limey's, which is a 'hole in the wall bar' with great food, kind of reminds me of some of my hometown favorite restaurants.  We decided to invite Aaron's buddies to have dinner with us.  Mark doesn't live far from us and we have dinner with him often so nothing too out of the ordinary to being having dinner with Mark at Limeys. 

After dinner, we just went home and watched TV, I fell asleep on the couch I think before 9 pm. 

Sunday we felt the most refreshed we both have in a long while, this weekend of relaxing was much needed!  We were actually very productive on Sunday.   The nice weather also helped motivate us to get some extra chores done around the house like cleaning out our cars.  What a great weekend it has been!

Italian Chicken & Penne

Found another good recipe from my Taste of Home Diet Comfort Foods cookbook, which I completely recommend to buy.  This one is a mouth full of delicious flavors.  What really caught my eye about this recipe was the fact that you use pizza sauce.  Very interesting and it works!  The green pepper and grape tomatoes are not only healthy ingredients but gives it the perfect zest.

As always, I NEVER chop onions or mince garlic because I'm a super lazy cook so I used my spice drawer options.  I used canned mushrooms, because again I'm lazy, and gluten free noodles.  But don't do what I did and throw a whole bag of penne noodles in... I made 16 oz and had Aaron call his friend at the last minute to come eat dinner with us because I had a ridiculous amount of pasta made!  Luckily when I make way too much, Aaron's friends will come over on little notice and eat so I don't have to have left overs for a week solid.  What is funny to me is they never ask what it is they are coming to dinner for, they just show up and eat whatever is prepared.  

P.S. This dish pairs good with a nice glass of red wine... or the whole bottle :)
